Course Info: A crispy roasted Martinigan Sol is one of the great classics of Austrian holiday cuisine. However, between purchasing a high-quality goose and the finished festive meal, there are numerous decisions to be made: How do you keep the meat juicy? How do you achieve crispy skin? Which side dishes go with it? And most importantly: How can such a menu be prepared without spending the entire holiday in the kitchen? In this cooking class, we will dedicate ourselves step by step to the preparation of a successful Martinigan Sol. You will learn what to look for when selecting, preparing, and roasting a goose raised in a humane environment, and how to achieve optimal quality for both the meat and skin simultaneously. Equally important as the main dish are the accompaniments on the plate. Together we will prepare a sweet-sour red cabbage with caramelized chestnuts as well as fluffy bread dumplings – two side dishes that have been accompanying the Martinigan Sol for generations and significantly contribute to the success of the menu. As a starter, we will cook a Uhudler wine soup with roasted dark bread cubes. The sweet conclusion will be quark-yogurt dumplings with berry compote. A special focus will be on the planning and preparation of the entire menu. You will learn which tasks can be done days in advance, how to optimally prepare individual components, and how to make the festive meal relaxed and without time pressure on the day itself. The class starts at 1:00 p.m. Until about 6:00 p.m., we will cook together, after which we will enjoy the prepared menu in a cozy setting. A course for all those who want to spoil their family or friends with a perfectly prepared Martinigan Sol while also sitting at the table as relaxed hosts.
