“Austrian specialties – traditions from the heart of Europe"
Course information: The Austrian cuisine did not develop in isolation but in the interplay of many cultures and regions of the former Austro-Hungarian Empire. Influences from Bohemia, Hungary, Northern Italy, and the crown lands of the Habsburgs continue to shape numerous dishes that have long become classics of Austrian cuisine. In this cooking course, we will focus on some of its most famous representatives and prepare them together using traditional recipes. The menu features a genuine beef soup with semolina dumplings, minced veal schnitzel with Madeira sauce and pea rice, fried chicken with potato and lamb's lettuce salad with pumpkin seed oil, veal goulash with butter spaetzle, boiled beef with cream spinach and roasted potatoes, and onion roast beef with fried potatoes and bacon beans. The sweet finale is a Kaiserschmarrn with plum compote. You will learn the essential techniques of classic Austrian cuisine – from cooking a hearty beef soup to proper braising and frying, as well as preparing traditional side dishes and pastries. Many of the dishes presented have been a staple of Austrian food culture for generations and have lost none of their popularity to this day. The course begins at 2:00 p.m. Cooking together will continue until about 6:00 p.m., after which we will enjoy the prepared dishes course by course in a cozy setting. A course for everyone who wants to get to know Austrian cuisine better, discover traditional recipes with their historical roots, and learn how to prepare these timeless classics from scratch.
